Ahead of his time as always, the "Trader" chose to offer Chinese dishes alongside the then contemporary Continental cuisine, creating the original fusion menu decades before it would become a trend. Following his culinary curiosity along the ancient spice route, he collected recipes to bring back to Trader Vic's, and his eclectic cuisine defined fine dining for decades.

Today, Trader Vic's continues the tradition with an ever-evolving menu featuring dishes from the Mediterranean, the Middle East, Asia, and Japan. Taste The World® at Trader Vic's.

Chinese Wood-fired Ovens

East Meets West

Trader Vic's Chinese Ovens can be traced back two thousand years to the Han Dynasty and differ from traditional direct fire barbecues in that the heat is indirectly drawn in from the outside. This technique imparts a subtle smoky flavor and prevents fat drippings from catching fire which can give meats an objectionable flavor and dirty appearance. The Chinese Ovens, unique to Trader Vic's, are the only type of barbecue known that avoids this. Each Trader Vic's restaurant has a room showcasing this ancient style of cooking.

Paradise In A Glass™

Following his history-making creation of The Original Mai Tai® in 1944, Trader Vic created over 200 signature cocktails. Using quality ingredients served in Trader Vic's own oversized vessels, mugs, and glassware, these frothy potations really do pack a punch. Feel the sting of our Scorpion Bowl or try a spicy Middle East favorite, the Tiki Puka Puka.

A Tropical Polynesian Getaway

Cross the threshold into Trader Vic's, and be instantly transported to the islands. Each of our restaurants is bedecked with authentic trappings collected from islands around the world. Oversized Fijian & Maori tikis stare out against a backdrop of hand-painted Tongan tapa cloth. Ancient New Guinean artifacts and life-sized outriggers ornament the ceiling. Trader Vic's Worldwide has a full-time team of Anthropology experts who scour the globe to collect these hand-crafted pieces. Every Trader Vic's features a unique collection of these fascinating artifacts.
