This dressing was classically used for our signature seafood salad but also goes well with chicken salad
Ingredients
- 1 cup Mayonnaise
- 4 tbsp Butter
- 2 tbsp Trader Vic’s Curry Powder
- ½ cup Pineapple Juice
- 1 tsp Salt
- 12-15 cranks Fresh Black Pepper
Directions
- In a sauté pan we want to sauté or “burst” the curry powder in the melted butter until it becomes fragrant.
- Add the curry mixture to a large cold bowl then add pineapple juice, then add the mayonnaise mixing well each time.
- Season with the salt and pepper, hold overnight in fridge.
