This dressing was classically used for our signature seafood salad but also goes well with chicken salad

Ingredients

  • 1 cup  Mayonnaise
  • 4 tbsp  Butter
  • 2 tbsp  Trader Vic’s Curry Powder
  • ½ cup  Pineapple Juice
  • 1 tsp  Salt
  • 12-15 cranks  Fresh Black Pepper


Directions

  1. In a sauté pan we want to sauté or “burst” the curry powder in the melted butter until it becomes fragrant.
  2. Add the curry mixture to a large cold bowl then add pineapple juice, then add the mayonnaise mixing well each time.
  3. Season with the salt and pepper, hold overnight in fridge.

*Adding nuts or rains to your salad is a good enhancement
